A kamado grill is a type of grill, just as a hibachi is a type of grill. While one of the best-selling name brands has “kamado” in its name, the term itself is more generic, standing for a dome or egg-shaped grill typically made of ceramic material, although some are cast iron or even aluminum. A kamado ceramic grill is a marvel of heat retention and “set it and forget it” operation. Essentially, the heat goes into the meat, and not into the atmosphere, as with conventional grills. These outdoor smokers can be set up for a low-and-slow cook time, allowing the meat to acquire a delicious smoky flavor, but they can also deliver high heat when needed for steaks, burgers, and meats that do better with a hotter, faster cook time.
