Santa Maria grill insert for the Hancock Grills Sterling 40 Freestanding Griddle. Made with 316 marine grade stainless steel. The hand crank lifts and lowers over fire to the desired distance from the heat. The adjustable grate cooking surface can be dropped down for intense, high temperature grilling, or lifted up for a smokier, low and slow style of cooking. It’s a style of cooking that is over an oxidative fire as opposed to a reductive fire that many covered barbecues use.
