Can I cook anywhere on the surface of the stove top? Why would I need "cook plates"?

Yes you can absolutely cook directly on top of the stove. The heat plates provide an insulated surface when cooking at lower temperatures is needed. The top of the stove can get too hot to slowly simmer a pot of soup or chili for example. Please give us a call if we can help further. Thanks!
